Gazpacho recipe (quick and easy)

So what to do when you go to the farmers market and buy a box of tomatoes… GAZPACHO!!! This recipe is delicious and so quick and easy! no peeling of the tomatoes required! This recipe comes from the Gazette Newspaper here in Montreal!

Ingredients

  • two tomatoes
  • one garlic clove
  • 1 tbsp of sherry vinegar or red wine
  • a pinch of sugar
  • salt
  • pepper
  • 3-4 tbsp of olive oil

Put all ingredients in a food processor and blend until smooth! Refrigerate for two hours before serving!
